Ingredients
- Mutton: 500 grams, cut into pieces
- Onions: 2 large, finely sliced
- Yogurt: 1 cup
- Ginger-garlic paste: 1 tablespoon
- Kashmiri red chili powder: 2 tablespoons
- Turmeric powder: 1/2 teaspoon
- Garam masala: 1 teaspoon
- Whole spices (cardamom, cloves, bay leaf, cinnamon stick): 1-2 each
- Cooking oil: 4 tablespoons
- Salt: to taste
- Fresh coriander leaves: for garnish
Instructions
- Marinate the Mutton: In a bowl, combine mutton pieces with yogurt, ginger-garlic paste, Kashmiri red chili powder, turmeric powder, and salt. Let it marinate for at least 30 minutes.
- Cook the Onions: Heat oil in a heavy-bottomed pot. Add sliced onions and sauté until they are golden brown.
- Add Spices: Add the whole spices (cardamom, cloves, bay leaf, and cinnamon) to the onions, stirring for a minute to release their flavors.
- Cook the Mutton: Add the marinated mutton to the pot. Cook on high heat for about 10 minutes, stirring occasionally until the mutton is browned.
- Simmer: Reduce the heat to low, cover, and let it simmer for about 1 hour, stirring occasionally. If necessary, add a little water to prevent sticking.
