Recipe

Prep Time: 15 minutes
Cook Time: 1.5 hours
Servings: 4-6

Ingredients

  • Mutton: 500 grams, cut into pieces
  • Onions: 2 large, finely sliced
  • Yogurt: 1 cup
  • Ginger-garlic paste: 1 tablespoon
  • Kashmiri red chili powder: 2 tablespoons
  • Turmeric powder: 1/2 teaspoon
  • Garam masala: 1 teaspoon
  • Whole spices (cardamom, cloves, bay leaf, cinnamon stick): 1-2 each
  • Cooking oil: 4 tablespoons
  • Salt: to taste
  • Fresh coriander leaves: for garnish

Instructions

  1. Marinate the Mutton: In a bowl, combine mutton pieces with yogurt, ginger-garlic paste, Kashmiri red chili powder, turmeric powder, and salt. Let it marinate for at least 30 minutes.
  2. Cook the Onions: Heat oil in a heavy-bottomed pot. Add sliced onions and sauté until they are golden brown.
  3. Add Spices: Add the whole spices (cardamom, cloves, bay leaf, and cinnamon) to the onions, stirring for a minute to release their flavors.
  4. Cook the Mutton: Add the marinated mutton to the pot. Cook on high heat for about 10 minutes, stirring occasionally until the mutton is browned.
  5. Simmer: Reduce the heat to low, cover, and let it simmer for about 1 hour, stirring occasionally. If necessary, add a little water to prevent sticking.
  6. Finish with Garam Masala: Once the mutton is tender, sprinkle garam masala on top and mix well. Cook for another 5 minutes.
  7. Serve: Garnish with fresh coriander leaves and serve hot with naan or steamed rice.
